In Dave the Diver, you will be serving customers at night who eat the sushi made out of the fish you have been catching.  The problem is, there is no surefire way to know how many customers will come at night. There are a couple of factors that will influence how many customers you get though.

The first is your Cooksta rating. The higher the rating of Bancho's Sushi, the more customers will show up. Surprisingly, the decoration in the sushi restaurant will actually have an influence on how many customers will show up. If you want more customers, you need to buy better decorations. Try to use these facts to keep track of how many customers are showing up.

You only have a limited supply of sushi available and any sushi not eaten gets thrown away. So it is important to know how many customers you will get at night. If you under-guess, you will be scrambling for more food but if you over-guess, then you will be wasting sushi which is problematic.

To prevent this, you just need to put one of each sushi you want to serve on the menu. Once you do that, set that sushi to Auto Supply. Once someone has ordered that sushi and it runs out, you will be able automatically resupply that sushi so you are not wasting food. This only works for as long as you have ingredients so make sure you pay attention.
