By interacting with a Mirror that has appeared in your camp, you can change your appearance (though you can't do this if you're playing as one of the Origin characters that the game offers to you). If you're interacting with the Magic Mirror and nothing is happening, then you're not alone. According to the developers of the game, the reason behind this is likely mods that you have installed. You see, the mods for Baldur's Gate 3 need to be updated along with the game in order to be compatible, and mods that haven't been will cause your game to break in various places.
In order to fix this, just uninstall all of your mods or disable them. You don't need to keep them uninstalled or disabled, just until they're updated, but these are likely causing the issues that you're finding trying to interact with the Magic Mirror. Try and interact with the mirror after you've uninstalled the mods and it should work! Now you can change your appearance.
